My new latest obsession! These I made with spinach and feta! I also make them with cheddar and jalapeno. Use your imagination!
Here is the ingredient list…just put it all in a food processor – form into patties and broil. Prepare a big salad or how vegetable skewers – it’s a delicious filling meal!
- 1 pound salmon – bones and skin removed
- 1 Tbsp mustard – Dijon
- 1/8 cup egg whites
- 1 tablespoon lemon juice
- 1/2 cup spinach
- 1/3 cup feta cheese
- Red Pepper flakes to your liking
- 2 scallions, chopped
