Recipe of the Day: Homemade Hummus

Store bought hummus is great if you are in a super rush. I prefer to make my own. I then have full control of the ingredients. The other thing is when I do buy store bought hummus, I always end up doctoring it up: more lemon, paprika, olive oil, salt etc. So, I make my own.

You can make it with whatever variation of vegetable you like: Eggplant, Garlic, Beets, Artichoke, Sun Dried Tomatoes- your call.

I chose red pepper this time around!

Red Pepper Hummus Recipe

Prep time:  10 mins
Cook time:  2 mins
Total time:  12 mins

Ingredients
•    2 16 oz cans of drained Garbanzo Beans
•    1 chopped Red Pepper
•    2 tsp. minced Garlic
•    2 Tbsp. Lemon Juice
•    2 Tbsp. Olive Oil
•    ¼ tsp. salt
•    Parsley garnish (optional)

Instructions
1.    Toss all ingredients into a food processor and pulse until smooth!
2.    Yup, that’s it. Can’t get much easier!
