We don’t often go out to eat, but when we have hit up Olive Garden, we’ve loved their lighter Zuppa Toscana soup that’s fills you up with a light broth, kale and potatoes. You could also easily substitute the sausage for lean ground turkey and omit the dairy if you’re looking to cut a few more calories. Why not take traditional recipes – like this one – and lighten them up to fit your diet…. that’s what we’ve done!
Plus, we’ve said it before, soups are a fantastic way to fill you up and help you lose weight and now we’ve added this delicious recipe to our routine!
Copycat Zuppa Toscana Soup

Ingredients
- 1 lb ground Italian sausage or lean ground turkey/chicken
- 2 cups chicken broth
- 4 cups water
- 2 large russet potatoes, sliced
- 1 medium white onion, chopped
- 2 garlic cloves, minced
- Salt and pepper, to taste
- 1/2 cup bacon bits [optional]
- 2 cups fresh kale
- 1 cup heavy whipping cream or evaporated milk
Instructions
- In a large dutch oven pot, brown meat on medium heat. Drain off the excess fat.
- Add chicken broth, water, potatoes, onion, and garlic. Cook on until potatoes are soft... about 10-15 minutes.
- Add bacon, salt and pepper and simmer for another ten minutes.
- Turn off heat and add kale and cream.
- Serve.
