Zuppa Toscana: An Olive Garden Copycat Recipe

We don’t often go out to eat, but when we have hit up Olive Garden, we’ve loved their lighter Zuppa Toscana soup that’s fills you up with a light broth, kale and potatoes. You could also easily substitute the sausage for lean ground turkey and omit the dairy if you’re looking to cut a few more calories. Why not take traditional recipes – like this one – and lighten them up to fit your diet…. that’s what we’ve done!

Plus, we’ve said it before, soups are a fantastic way to fill you up and help you lose weight and now we’ve added this delicious recipe to our routine!

Copycat Zuppa Toscana Soup

Ingredients
  1. 1 lb ground Italian sausage or lean ground turkey/chicken
  2. 2 cups chicken broth
  3. 4 cups water
  4. 2 large russet potatoes, sliced
  5. 1 medium white onion, chopped
  6. 2 garlic cloves, minced
  7. Salt and pepper, to taste
  8. 1/2 cup bacon bits [optional]
  9. 2 cups fresh kale
  10. 1 cup heavy whipping cream or evaporated milk
Instructions
  1. In a large dutch oven pot, brown meat on medium heat. Drain off the excess fat.
  2. Add chicken broth, water, potatoes, onion, and garlic. Cook on until potatoes are soft... about 10-15 minutes.
  3. Add bacon, salt and pepper and simmer for another ten minutes.
  4. Turn off heat and add kale and cream.
  5. Serve.
