Upscale Lunch: Chicken Taco Salad Bowl

Bored of your everyday salads and wraps for lunch? Here is a great option to kick up your mid-day meal with flavor and color. There is a little bit of everything in this recipe. I chose to simply use raw corn – if you’ve never tried it, you are missing out and there is an abundance now at the farmers market! I also decided to use chicken breasts and brine them overnight to be certain that they stay moist. You can also save calories by simply putting vinegar (your favorite), or even lemon juice, then the avocado will serve the place that the olive oil had in the dressing. Enjoy!
