Holiday Weekend Watermelon Margaritas!

Yesterday we celebrated my moms birthday! I made a delicious meal. Guacamole made with toasted pepitas, soft tacos stuffed with shrimp and scallops and watermelon margaritas! Let me tell you how that happened – the margarita part at least.

I went into the corner Guatemalan bakery and discovered they also have fresh juices. Strawberry, mango, orange, combinations of many as well, along with watermelon. That’s all I needed to hear. My recipe brain went into overdrive thinking about how great the margaritas were going to be. And they were! I made mine frozen and slushy – you can also choose to make them shaken. Enjoy.

BLENDED WATERMELON MARGARITAS

Ingredients
Makes 6 generous margaritas

1 cup fresh watermelon juice – or fresh watermelon chunks!
1 cup of tequila
1/4 cup of orange liqueur
3 limes juiced, 1 sliced
2 cups ice – I used the lemon flavored ice.

Place all ingredients into blender and blend until smooth.  You may need to blend it in smaller batches, depending on the size of your blender.  I learned this the hard way – or the messy way if you will!
