Recipe of the Day: Homemade Strawberry Jam

I’ve had an extra box of 12oz ball jelly jars in my hall closet since last November…a holiday gift idea that clearly stalled. Well, we are back in motion again! I hit the farmers market this morning for fresh strawberries. This is the time of year to make jams and jellies. The berries are so incredibly sweet, that you will need less sugar – I like that! If you’ve never tried canning before, this is a very easy recipe and how to. Shinee of Sweet and Savory has a quick method that you first time canners can get your feet wet with! Enjoy!

HOMEMADE STRAWBERRY JAM

Ingredients
1.    • 2lbs strawberries – this totals 4 cups – (I used 5 cups of berries)
2.    • 2 cups sugar – (I only used 1 cup of sugar)
3.    • ¼ cup lemon juice

Instructions
1.    1. Wash and hull the strawberries. Cut them in small pieces and mash them with a potato masher. Combine the strawberries, sugar and lemon juice in heavy bottomed pan. Stir over medium heat until the sugar is dissolved.
2.    2. Then increase the heat and boil until the mixture reaches 220 degrees F, or for about 25-30 minutes. Stir frequently. Turn the heat off, and skim off the foam.
3.    3. Pour the jam into hot sterile jars. Leave about ¼ in left from the top. Run a clean butter knife along the inside edges of the jar to remove any air bubbles. Make sure the edges of the jar are clean. Put the lid on and tighten the ring around them, but not too tight.
4.    4. Place the jars into boiling water and continue to boil for about 10 minutes. Then turn the heat off, and let them sit for 5 minutes. Now transfer the jars onto a cooling rack and let them cool overnight. You will hear popping sounds, which is good thing. It’s a great sign that your jars are being sealed.

1.    This recipe makes about 5 cups of jam.
