Recipe of the Day: PB2 Asian Slaw

Back on track to healthy eating starts now! Well it started last night actually. I made this delicious slaw/salad for a concerts in the park event with friends. It was so delicious and guilt free. Truth be told, peanut butter is my kryptonite. I literally cannot have more than a single serving of peanut butter in my house at any one time. The last time I bought a jar, I ate the entire thing in 2 days. #noselfcontrol My solution to my lack of discipline has been powdered peanut butter. If you haven’t tried it – please do! A serving of 2 tablespoons is 1/4 the calories of regular peanut butter. Tastes amazing, and absolutely hits the spot.

Here is my yummy slaw. Hope you like it!

PB2 ASIAN SLAW
Ingredients

For slaw:10oz green cabbage – sliced (I buy the prepped and cut)
1 bag broccoli slaw
4oz purple cabbage – sliced
4 green onions chopped
1/2 red bell pepper sliced
Cilantro – to your liking, I use 3/4 of a whole bunch
2 Tbsp peanuts or slivered almonds

For dressing: I put all of these ingredients into a canning jar so I can just shake to mix well.
1/4 cup PB2
1.5 Tbsp Olive Oil
1/4 cup Rice Wine Vinegar
Black Pepper2 Tbsp hot water

Directions
Combine all of the vegetables in a large bowl.
Put all of the dressing items into the canning jar and shake vigorously.Pour the dressing over the greens and toss thoroughly with the vegetables.
Top the slaw with the nuts.

Serve and Enjoy!
