Recipe of the Day: Homemade Marinara Sauce

Homemade is always the best choice.

Problem is usually time. It’s often easier to just purchase tomato sauce – and truth be told – there are some great brands out there… to name a few: Dave’s Gourmet Heirloom Tomato and Lucini Rustic Vodka Tomato Sauce.

But when I do have time, I like to make my own using fresh tomatoes, my favorite anti-inflammatory food. Here’s a quick and simple recipe that is both, healthy and delicious!

Homemade Marinara Sauce

Ingredients:

1 tablespoons olive oil
1 medium onion, finely chopped
2 cloves garlic, minced
2 (28-ounce) cans whole tomatoes, drained, tomatoes chopped
3 tablespoons tomato paste
1 teaspoon dried oregano
1 bay leaf
Salt and pepper

Directions:

In a large pot, heat the oil over medium heat. Add the onion and cook, stirring occasionally, until soft, about 5 minutes. Add the garlic and cook for 2 minutes longer. Add the remaining ingredients and cook, uncovered, stirring occasionally, until thickened, about 30 minutes. Season with salt and pepper, to taste.
