Recipe of the Day: Loaded Arugula Salad

I am a huge fan of arugula. For the most part I like to keep it simple because of its bold peppery flavor. Today I am going for something a little different. Going to add some sweet, tangy, salty and savory to the greens and see how it goes! I had some leftover green grapes and pomegranate from the weekend that needed to be used. I also had beets from the farmers market were ready to be roasted. Once roasted I chopped and chilled them in the fridge for about 90 minutes.

I had my base of arugula, then added all the ingredients and here is the best part, I topped it with coarsely chopped toasted walnuts and crumbled blue cheese. I drizzled with Olive Oil, balsamic vinegar, salt and pepper. Done. Delicious. Divine.

Loaded Arugula Salad

2 Cups Arugula
6 green grapes
1 Tsp pomegranates
1/3 cup beets
1 Tbsp toasted Walnuts
1 Tsp crumbled blue cheese
Oil & Vinegar
Salt & Pepper
