Healthy LifeHack – GF Chicken Nuggets

This is a recipe that came across my cutting board at the perfect time. Last weekend I was seriously jonesing for some Chicken Nuggets, which I haven’t had in about 6 years, and had one foot out the door to go and get them when a fateful text came through that saved my diet and conscious. I had been texting a friend about my craving and she replied with not only a message of “don’t do it” but a healthy solution! A way to have my cake and eat it too!  One of the best parts about this solution is that it is an un-fried and gluten free way of turning a stereotypical “junk food” staple to a nutritious at-home option.

They are called Coconut Flour Nuggets. I know what you’re thinking, “How have I not thought of this before?!” Don’t worry, that was my first thought too. Half of my life is working on healthy life hacks and nutritious recipes and it just never occurred to me that Nuggets could be included in that.

I think the best part of this whole scenario is the ease in completing it.

So, here goes:

In a plastic bag or bowl, combine the following: (keep in mind you will need to add or subtract measurements according to the amount of nuggets you’d like to make)

  • 200 grams Organic Coconut Flour
  • 1/2 tsp Cracked Pepper
  • 1/4 tsp Sea Salt
  • 1/2 tsp Onion Powder
  • 1/2 tsp Red Pepper Powder (or chili powder for an extra kick)

Next step, lightly coat the chopped or sliced chicken in extra virgin olive oil, then put into the flour mix until coated all the way around. Once you’ve got those chicken pieces totally covered put them onto a baking tray and into the oven. If you have one, bake the chicken on a cooling rack in the over for an extra crispy finish.
