Are we looking at the perfect side dish? It’s healthy. It’s easy. What more could you ask for? Since we discovered this dish a while back, it’s been our go-to side dish that we combine with a lean protein for a delicious weeknight meal.
Avocado Cilantro Lime Brown Rice
- 4 cups brown rice, cooked
- 2 medium ripe avocados
- 2 Tbsp fresh lime juice
- 1/4 cup cilantro, chopped
- 1/4 + 1/8 tsp ground cumin
- 1 small clove garlic, minced
- Salt and freshly ground black pepper, to taste
- Mash avocados in a large mixing bowl.
- Combine lime juice, cilantro, cumin, garlic and season with salt and pepper to taste.
- Stir in warm, cooked brown rice and gobble up!
