Apple and Smoked Gouda Stuffed Chicken with Sweet Potatoes

This deceptively simple recipe is as healthy as it is delicious! It packs a lean protein, vegetables, a little fruit and just enough dairy to make it worthwhile.

If you’ve never had smoked gouda, a little goes a long way. Or, if you’re not a fan of smokey cheeses, you can substitute smoked gouda for regular old gouda or even provolone. Another benefit to this dish is it can be prepped in the morning and brown in the oven when you get home from work for a fancy dinner worthy of a dinner party.

Ingredients
  1. 2 large boneless, skinless chicken breasts
  2. 4 slices smoked gouda cheese
  3. 1/2 apple, sliced
  4. 1 teaspoon fresh thyme, more as desired for garnish
  5. 2 sweet potatoes, peeled and diced
  6. 1/2 tsp smoked paprika
  7. 1 tsp fresh thyme leaves
  8. Salt and pepper, to taste
  9. Olive oil
Instructions
  1. Preheat the oven to 425° F.
  2. Spray a large baking dish or sheet pan with nonstick cooking spray.
  3. In a bowl, mix diced sweet potatoes with olive oil, smoked paprika, 1 teaspoon thyme leaves and salt.
  4. Place sweet potatoes in a single layer in the prepared baking dish.
  5. Using a sharp knife, cut a large slit into each chicken breast (a.k.a. butterfly the chicken).
  6. Inside each chicken chicken breast, layer 4-5 apple slices followed by 2 slices of smoked gouda. Sprinkle the inside with fresh thyme, salt and pepper
  7. On the top of the chicken, drizzle with olive oil, and a little more salt and pepper.
  8. Place the chicken in the baking dish and arrange sweet potatoes around chicken.
  9. Bake for 20 minutes and flip the sweet potatoes.
  10. Return to oven and bake until the chicken is cooked and the sweet potatoes are tender; about 10 additional minutes.
  11. Serve immediately and enjoy!
