Healthy Weekend: Apple Fritter Pancakes

In most restaurants, apple pancakes are just plain pancakes covered in gooey sugary apple.  Not these!  Built-in apple is the way to go. And with the chia seeds, and high quality grains, these will make you feel GOOD.  As all food should. And the syrup?  Makes the whole thing tastes like a candy apple!  Except that it’s not overly sweet, and won’t get stuck in your teeth! Also, the flax oil will give you an awesome dose of omega 3’s, as do the chia seeds. Try not to fall in love too hard!

Apple Fritter Pancakes

For Pancakes
  1. - ⅔ cup spelt flour
  2. - 6T large flake oats
  3. - 1 egg
  4. - 1T melted coconut oil (+extra for pan)
  5. - 1 medium apple, diced
  6. - 2t Cinnamon
  7. - 1t baking powder
  8. - 2t vanilla
  9. - ⅔ cup milk (I used almond)
  10. - 2T chia seeds (whole)
  11. - pinch salt
For Syrup
  1. - equal parts maple syrup and flax oil
  2. - optional: add a little vanilla protein powder too
Instructions
  1. - preheat your pan to medium, and melt a little coconut oil in it
  2. - whisk together egg, vanilla, coconut oil and milk
  3. - fold in flour, oats, baking powder, cinnamon and salt
  4. - fold in chia seeds and apple
  5. - cook ¼c scoops of batter. it's thick so it's best to flatten it a bit after you put it on the pan
  6. - flip when edges start to look a little firm
  7. - stir together syrup ingredients
