I love pizza. I could eat it every single day. Truth be told, I do eat pizza four nights a week. Look, it’s not like the restaurant style pizza laden with cheese and a heavier crust. This is a super simple homemade, healthy take on my favorite food. Today I am showing you my Mushroom and Artichoke Pizza. Super simple. Super delicious.
MUSHROOM ARTICHOKE BROWN RICE TORTILLA PIZZA
2-3 Sliced Baby Bella Mushrooms2 Chopped – Water Packed Artichokes
2 Tbsp. Low Salt Marinara
1 Tbsp. Shaved Parmesan
1 Brown Rice Tortilla
Heat oven to 400˚
Slice all your ingredients to have them ready.
For the tortilla, I put it over the stove top burner on each side to get it all toasty. Once that is finished and the oven is heated up, I add the marinara to the top and pop the tortilla into the oven for about 4 minutes.
Take the tortilla out and add the mushrooms and artichokes – then back into the oven for 3 minutes.
Remove the tortilla, and sprinkle with the Parmesan. Back into the oven until the cheese melts.
Cut into 6 pieces.
**Add Basil on top if you want!
**Sprinkle with Red Chili Flakes if you like!
This entire pizza is around 300 calories. I usually serve with a big salad – adding the salad makes the total meal less than 400 calories.
