Bell Pepper Nachos!

Nachos! We all love them. This a genius way to get your nachos without the extra calories, and guilt! You can make this for yourself, or even for a group of people. You have the choice to pick in choose ingredients as well, depending on what you like. You can make this vegetarian, vegan or you can even add chicken – your call! Bell Pepper Nachos
1 large bell pepper (orange or yellow or red)
1/2 cup re-fried beans
1/4 cup cheddar or jack cheese, shredded

Here are your optional toppings
black olives
green chiles
any other veggies – broccoli, cauliflower, tomato
greek yogurt

How to:
•Start by preheating the oven to 400F.
•Line a baking sheet with nonstick foil.
•Cut the bell pepper into bite size pieces.
•Spoon a little re-fried beans onto each bell pepper. You can add your meat now if desired.
•Place the bell peppers onto the foil close together and sprinkle on the cheese.
•Place in the oven for 12-15min.
•When the cheese has melted – plate and devour!
