Recipe of the Day: Fresh Corn & Black Bean Salsa

How about this little number? I know it says salsa, however, this eats like a meal. I use this as a topping but also as a salad or egg topper. I love fresh cilantro and corn. You can also make this spicy too by adding jalapeño! I usually have all of these ingredients in the fridge and pantry – so I make this quite often. Give it a try!

Ingredients
3 cups fresh raw corn (I suggest using white and yellow mixed)
2 (15 ounce) cans black beans, drained and rinsed low sodium
2 cups fresh tomato chopped
1 bunch finely chopped cilantro
5 green onions, finely sliced
1 small red onion, finely chopped
1 red bell pepper, seeded and chopped
1 tablespoon minced garlic
1/4 cup lime juice
1 avocado – peeled, pitted, and diced
2 tablespoons olive oil, or to taste
salt and pepper to taste

Directions
1.    Mix the corn, black beans, tomatoes, cilantro, green onion, red onion, bell pepper, and garlic in a large bowl. Gently mix in the lime juice and avocado. Drizzle with olive oil to serve. Salt & Pepper to taste.
