Apple CinnamonSnack #5: Baked Apple Cinnamon Chips

This is an easy snack to make ahead at home. All you do is slice up your favorite type of apple, any kind will do, and bake them in the oven with a sprinkle of cinnamon for 45 minutes at 225 degrees. If you have a parchment paper on a baking sheet, use that or if you have a silpat non-stick mat that works too. Either way, once they are cool and dry this is a treat you can pop into plastic bags to throw in your handbag or backpack.

Pumpkin SeedsSnack #4: Spicy Pumpkin Seeds

Pumpkin seeds are full of protein, copper, zinc, and magnesium so they are an excellent source of nutrition. You can buy ready made organic pumpkin seeds from your local health food store, or make them yourself if you are feeling industrious. If you buy some, go for the plain ones that you can season yourself with a little chili powder or cinnamon for a spicy treat that revs your metabolism up the right way.

Who knew that you could make healthy vegetable jerky with eggplant? If you don’t have a dehydrator, you can just use your oven on the lowest setting for about 8 to 10 hours. Cut the eggplant into thin strips and marinate them overnight first in some balsamic vinegar. Season with a dash of sea salt before placing them in the oven.
