Cooking chicken in the slow-cooker can be a lifesaver for busy people looking to eat healthy during the weeknights. Sometimes the mere thought of having to cook a meal – let alone something healthy – when you get home from work, can seem like a real daunting task. However, if you were keen enough to start something in the slow cooker that morning – when you had more energy – you’d be more likely to eat something healthy when you got home. If this sounds all too familiar, then this 4-ingredient chicken verde recipe is for you!
The 4 simple ingredients that go into this recipe are items that many of you probably have on hand any given day, making it a piece of cake to throw into the crockpot before you rush off to work. It’s the ultimate “set it, and forget it!” recipe.
Another HUGE benefit of this slow cooker recipe is that you can easily make enough for an entire weeks worth of meals. Tacos on whole-wheat tortillas one night… taco quinoa bowl the next night and Mexican salad the next! Heck, we’ve eaten it all by itself!
- 4-6 chicken breasts; boneless & skinless
