Recipe of the Day: Breakfast Burrito with Spinach and Tomato

Breakfast burritos – the traditional way – could blow your calorie allotment for the day. I’ve come up with a version that will not break the bank and will still provide the satisfaction of a traditional breakfast burrito. I opted for all egg whites in this version. You may want to use 1 whole egg with 2 egg whites – your call. I added the good healthy fats with avocado, which will also keep you full longer. The high fiber tortillas are great  – I like La Tortilla brand. Feel free to make tweaks to make this burrito your own – maybe you want a different cheese or even add turkey instead or Canadian bacon. Have fun with this one.

BREAKFAST BURRITO with SPINACH and TOMATO

Ingredients:
3 egg whites
1 cup cooked spinach
8 cherry tomatoes cooked
1/3 avocado
1 tablespoons cheese shredded cheddar cheese
1 high fiber whole wheat tortilla
salsa – your choice!

Directions:
Whisk eggs, then cook them in a non-stick skillet. Cook spinach and tomatoes in a non stick pan til wilted.
Place the cooked eggs down the middle of the tortilla. Add the spinach, tomato, avocado, and cheese. Roll the tortilla into a burrito, folding in the edges. Place burrito in a skillet over medium heat until outside of burrito starts to turn golden brown (1-2 minutes per side).

Serve immediately! I also like to add a hot sauce – Tapatio is one of my favorites.
