Avocado Cilantro Lime Brown Rice

Are we looking at the perfect side dish? It’s healthy. It’s easy. What more could you ask for?  Since we discovered this dish a while back, it’s been our go-to side dish that we combine with a lean protein for a delicious weeknight meal.
Avocado Cilantro Lime Brown Rice
  1. 4 cups brown rice, cooked
  2. 2 medium ripe avocados
  3. 2 Tbsp fresh lime juice
  4. 1/4 cup cilantro, chopped
  5. 1/4 + 1/8 tsp ground cumin
  6. 1 small clove garlic, minced
  7. Salt and freshly ground black pepper, to taste
  1. Mash avocados in a large mixing bowl.
  2. Combine lime juice, cilantro, cumin, garlic and season with salt and pepper to taste.
  3. Stir in warm, cooked brown rice and gobble up!
