I love this! I’ve been making mini egg quiches in muffin tins for years and this takes my recipe to a new level. This is a great way to incorporate bread and bacon to the individual serving. I like to have a runny egg, so be advised when you put the tin into the oven to not over cook. You can always scramble your eggs if you are not a fan of the egg yolk. I would serve this with a bit of avocado and a bit of mixed greens with a light homemade dressing – maybe lemon, olive oil, honey and salt and pepper. Yum! I want this now! Enjoy!
