Chicken Avocado Sandwich Filling:
- 1/4 avocado
- 2 tablespoons plain yogurt
- 1 teaspoon lemon juice
- 3/4 cup organic shredded chicken, precooked
In a bowl, mash up the avocado with the lemon juice and yogurt until it is completely combined. Next, add the chicken and lightly mix until the chicken is coated. That’s it!
For the Sandwich:
- 1 whole-grain English Muffin
- 2 thick ripe tomato slices
