Easy Peasy Recipe: Leftovers n’ Eggs

Leftovers n' Eggs
  1. Egg Whites (or uncooked scrambled eggs)
  2. Dinner (or lunch) Leftovers
  1. Place a scoop of leftover roasted veggies, potatoes, or meat in a container; top with egg whites or a cracked egg; and heat in the oven for approximately 5-10 minutes at approx. 375F. If you're in a rush, throw it in the microwave until the egg white is cooked through, probably 30 to 45 seconds. Feeling extra fancy? Sprinkle with some freshly grated Parmesan cheese!
