Enchiladas for Breakfast!

This is a great recipe for the weekend when you know you are going to get out and be active. This is definitely a splurge or cheat meal. It’s decadent and super filling. So enjoy it. Eating clean eighty percent or more of the time can be a bit boring. I would even suggest making a few tweaks to make it a bit lighter. Use less cheese, chicken sausage, corn tortillas, skim milk or water, and use egg whites. Heck then the whole recipe would be doable even mid-week!
