I love Mexican food! It could be from growing up in California, or simply the fact that it is damn good! Whatever the reason, I’m all about it, however it’s exceedingly difficult to find healthy Mexican recipes that actually taste like… well… Mexican food. So, when I found out that zucchini boats could act as an enchilada substitute, I had the oven on in no time and this recipe did not disappoint!
