
Power Bread: Banana Style!

Ingredients
- 1 3/4 cup whey (see Not2 3 below for subs)
- 1/3 cup coconut oil
- 2 eggs
- 2.5 medium ripe bananas
- 1/4 almond milk
- 1 teaspoon baking soda
- 1/4 cup date syrup
- 1/4 cup honey
- 1 teaspoon madagascan vanilla extract (optional)
- 1/2 teaspoon ground sea salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup roughly chopped pistachio nuts
- 1 tsp Dulce de Leche natural flavoring (this is 100% optional but adds a great extra flavor note to the banana bread!)
Instructions
- 1. Preheat your oven to 160 C (320 F).
- 2. Blend all ingredients together.
- 3. Bake in a bread pan (ideally a silicone one) until your knife comes out clean (around 40-45 minutes, usually no more than that).
- 4. Munch! Or set to cool and then wrap in foil. Store it in the fridge!
Notes
- Macros per slice (out of 12): 199kcals, 23.8 carbs (out of which 4.7g is fiber!), 8.7g protein, 8.5g fat.
