I’m going to help get you ready for the July 4th holiday this week and offer up so unique items that you may not have had at your BBQ’s in the past! I love this little number – I mean the grill is already on right? Get this one going early so you have time to chill it before you serve!
Grilled Pineapple and Mango Salsa – Serves 6
1 1/2 cups ripe pineapple, grilled
3/4 cup ripe mango
1 tbsp lime juice
1 1/2 tbsp fresh cilantro, chopped
1/2 cup red bell pepper, chopped
1/4 cup red onion, chopped
3/4 cup tomato, chopped
1/2 cup avocado, chopped
1 1/2 tbsp extra virgin olive oil
1/4 tsp sea salt, to taste
1. Slice and grill pineapple.
2. Dice the mango and pineapple.
3. Small dice the peppers, onion, tomato, and avocado.
4. Mix in a bowl and add oil, salt, lime and cilantro.
5. Mix well and chill for 2 hours.
**Feel free to add jalapeño if you like! That’s what I will do – maybe make a non-jalapeño versions for the kiddos!
