I love eggs and I especially love eggs benedict. I like my muffin to be extra toasted so you get that nice crunch. This is an easy yet impressive breakfast/ brunch recipe. I have a few tweaks I like to do. I prefer the eggs benedict with no meat – I know, it makes not a traditional benedict, however, its divine. I substitute heirloom tomato slices and sliced avocado instead of the canadian bacon. That’s just me though – you should do these the way you like. I also add lots of lemon juice! I also am a fan of the runny runny yolk. Now I am hungry! Enjoy!
