Here is a yummy vegan pasta that is chock full of healthy fats, toasted pine nuts and cauliflower. This is going to be a new carb favorite on my list as I bring running longer distances back into rotation! I have been having half of an avocado most nights now with my lentils and salads, and this yummy dish is simply another vessel to get that avocado into my belly!
While there is cauliflower added, you can add whatever veggies you like too. I think adding roughly chopped cherry tomatoes, broccoli or even eggplant would be delicious. Add your own healthy twist to make this your new favorite pasta!
