If you thought quinoa is for salads and sides with lunch and dinner, think again. Lately I’ve even seen quinoa warmed with milk and berries – a new take on oatmeal! Who knew! You can prep the quinoa the night before, cook the egg in about 5 minutes and be eating in 10 minutes start to finish. A healthy, filling and different take on your first meal of the day! Enjoy!
SAVORY BREAKFAST QUINOA BOWL
1 1/2 cups cooked quinoa, brown rice, millet or other whole grain
8 cherry tomatoes, halved
1/2 avocado, sliced
1 hard-boiled egg
5 fresh basil leaves, thinly sliced
Olive oil drizzle – if desired
Fresh lemon juice, rice vinegar or balsamic vinegar if desired
Salt & Pepper to taste
1. Arrange the cooked grains, cherry tomatoes, avocado and egg in a bowl.
2. Top with thinly sliced basil leaves, a drizzle of olive oil, vinegar, salt and pepper.
