Grilled Vegetarian Kababs

Alright, I admit it… this is a recipe that doesn’t exactly have a wow factor in name or look. But good lord these are delicious! Inspired by the need to cook something for a vegetarian friend of mine when we were having dinner the other night, these babies will fill you up, are packed full of nutrition, and taste amazing going down!

Here’s the recipe!

Take the following ingredients and slice them into decent sized chunks for skewering:

  • 3 Bell Peppers
  • 2 Red Onions
  • 1/2 lb of Shitake Mushrooms (Chestnut and Button mushrooms work too)
  • 1/2 Brussel Sprouts
  • 1/2 lb Baby Tomatoes
    • If you’re feeling extra adventurous (and are not vegan) you can throw a few bits of halloumi cheese on the skewers as well.

Skewer the veg in any order you like, then give them a light coating of virgin olive oil (I use organic olive oil spray, coconut or almond oil is good too). Season lightly with a pinch of sea salt, cracked pepper, and garlic then throw them on the BBQ grill for about 6 mins on each side (or until cooked through). You canals add chili powder or lime to really get some flavor blasts!
