Scream for (Healthy) Ice Cream: Green Tea & Pistachio

Ready to beat the heat? Somehow, summer is still as hot as ever and finding a delicious treat to keep you from temperature overload can be difficult if you’re watching your nutrition, health, and sugars. This recipe is all about making a healthy, nutritious, and most of all delicious alternative to the summer (and fall) classic that is ice cream. It’s Matcha Green Tea Ice Cream!

Matcha Green Tea and Pistachio Ice Cream
  1. 1 c cashews
  2. ¼ c maple syrup
  3. 2 Tbsp fresh lemon juice
  4. ¼ c canned coconut or almond milk
  5. 1 Tbsp matcha green tea powder
  6. 2 frozen bananas
  7. ⅓ c pistachio pieces
  1. 1. COVER cashews in water and soak overnight. Rinse and drain.
  2. 2. BLEND together cashews and remaining ingredients until thick and creamy.
  3. 3. TRANSFER to a loaf pan and freeze 4 hours before serving.
  1. SERVINGS: 3 to 4 / MAKES: 3 cups 1½ pints
