Matcha Green Tea and Pistachio Ice Cream

Ingredients
- 1 c cashews
- ¼ c maple syrup
- 2 Tbsp fresh lemon juice
- ¼ c canned coconut or almond milk
- 1 Tbsp matcha green tea powder
- 2 frozen bananas
- ⅓ c pistachio pieces
Instructions
- 1. COVER cashews in water and soak overnight. Rinse and drain.
- 2. BLEND together cashews and remaining ingredients until thick and creamy.
- 3. TRANSFER to a loaf pan and freeze 4 hours before serving.
