Protein Bakery: Marvelous Muffins

Protein Muffin Perfection!
  1. 20g Whey Protein (I use vanilla or unflavored)
  2. 2 whole eggs
  3. 65g ground almonds
  4. 60g date syrup (or, if you don’t have any, use agave syrup)
  5. 20g coconut oil
  6. 30ml almond milk
  7. 25g applesauce (or 1/2 fresh banana)
  8. A splash of orange oil (around 1 tbsp)
  9. Cinnamon to taste (I added around 1/2 tbsp in total)
  10. 90g self raising gluten free flour
  1. In a food processor or using a handheld blender, mix all of the above ingredients until you get a smooth batter.
  2. Bake in 4-5 muffin paper cups (depending on how big they are) at 160 C for about 25-30 minutes or until, when poked with a knife, your knife comes out clean.
  1. The best part about this recipe is the fact that it is simple. Yes, there are a few more ingredients than my normal protein cooking recipes, but all it takes is throwing them all in a blender and BOOM! Deliciousness is at hand!
